Darren Purchese

Darren Purchese is a chef, author and television presenter whose career has been defined by creativity, precision and a restless curiosity about food. After more than three decades in professional kitchens, he is now embarking on a new chapter on Flinders Island—one shaped by landscape, community, the Southern Ocean and a deep connection to place. 

As Creative Director of Food for Outscape, Darren has developed a food experience that connects guests meaningfully with Flinders Island. Working closely with local producers, fishers and growers, he creates generous food guided by the island’s seasons and the produce available. 

His food now moves naturally between the kitchen, the shared table and the outdoors. Freshly caught seafood, native produce, wild ingredients and island botanicals are treated simply—cooked over flame, baked in coals and brought together in relaxed family-style meals. At Outscape, the island dictates the menu, with each meal shaped by the produce available, the season, the weather and the landscape. 

This new direction builds on a career that established Darren as one of Australia’s most distinctive culinary talents. The author of five cookbooks, a judge on The Great Australian Bake Off,  regular on global smash Masterchef Australia  and  the creator of Melbourne’s celebrated B&P Sweet Studio, he has earned a reputation for imagination and technical excellence. Today, the precision and creativity of his pastry background sit alongside his passion for live-fire cooking, fermentation, preservation, local produce and meaningful hospitality. 

For Darren, Flinders Island is not simply a backdrop. It is home, a source of daily inspiration and the foundation of his next body of work. Through Outscape and his wider creative projects, he is exploring a more grounded way of cooking—one that celebrates resourcefulness, responds to place and brings people together through memorable food and generous storytelling.
